Chocolate Pancake Day…..ShakeO style.

Every wafflesSaturday that we aren’t running off to a soccer tournament, my husband likes to make pancakes for the kids. It’s his “thing” and he usually makes a crazy rendition of the plain pancake by adding cinnamon or pumpkin, or whatever he can think of. The kids often ask “are these weird?” In our attempt to fill our kiddos with food and not junk we tried these Chocolate Shakeology waffles by Chalene Johnson. Of course the kiddos wanted to add whipped cream and all sorts of craziness, but we kept is simple with fresh berries and pure maple syrup. I’d say we hit a home run!



This recipe is very simple:


1 cup egg whites

1.5 packets of Quaker Oats Weight Control Maple & Brown Sugar Instant Oatmeal

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

.5 cup chocolate protein powder

Truvia Sweetener to taste (start with 3 individual packets)

Mix egg whites, oatmeal, vanilla, cinnamon, protein powder, and sweetener in a blender and process until completely blended.  Pour the batter into small medallions on a hot griddle or nonstick skillet.  The batter is on the thicker side, so take the back of a spoon and spread out the batter so that the pancake is flattened to about 4 inches in diameter.  When you notice the edges starting to bubble, flip the pancake to the other side.

Makes 8 pancakes.

Per serving (1 pancake): 91 calories, 10 g protein, 12 g carbohydrates, 1 g total fat, 2 g dietary fiber, 105 mg sodium.
